Light & Fluffy No-Banana Protein Pancakes (over 40g of protein!!! 🤯)

Ingredients (makes 4-5 pancakes):

  • 30g (2 scoops) Clean Nutrition Whey Protein Powder (We used Vanilla! 🍨)
  • 30g (1/4 cup) flour (regular flour, oat - or almond if you want it low carb)
  • 1 tsp baking powder
  • 2 egg whites (60g)
  • 1 large egg
  • 60 ml (1/4 cup) milk of choice
  • 1/2 tsp vanilla essence
  • Cooking spray

Instructions:

  1. Preheat your fry-pan and lightly grease it with cooking spray.
  2. In a mixing bowl, whisk together protein powder, flour, and baking powder.
  3. Add egg whites, egg, milk, and vanilla extract. Whisk until smooth.
  4. Pour small amounts into your hot pan - cook for 1-2 minutes per side or until golden brown and set in the middle.
  5. Serve with Greek Yoghurt, fresh fruit, Nothing Naughty Fibre Syrup, or nut butter!
