Light & Fluffy No-Banana Protein Pancakes (over 40g of protein!!! 🤯)

Ingredients (makes 4-5 pancakes):
- 30g (2 scoops) Clean Nutrition Whey Protein Powder (We used Vanilla! 🍨)
- 30g (1/4 cup) flour (regular flour, oat - or almond if you want it low carb)
- 1 tsp baking powder
- 2 egg whites (60g)
- 1 large egg
- 60 ml (1/4 cup) milk of choice
- 1/2 tsp vanilla essence
- Cooking spray
Instructions:
- Preheat your fry-pan and lightly grease it with cooking spray.
- In a mixing bowl, whisk together protein powder, flour, and baking powder.
- Add egg whites, egg, milk, and vanilla extract. Whisk until smooth.
- Pour small amounts into your hot pan - cook for 1-2 minutes per side or until golden brown and set in the middle.
- Serve with Greek Yoghurt, fresh fruit, Nothing Naughty Fibre Syrup, or nut butter!
