Easter Marshmallow Slice with Speckled Eggs (Only 76 cals & 6.7g protein per slice!)

Ingredients (makes 8 squares):

Instructions:

  1. Measure cold water into a medium sized bowl (at least 1.5 litres), and sprinkle gelatine over the top. Let it sit for 5–10 minutes to bloom.
  2. Heat the hot water and keto sweetener on the stove until simmering lightly. Stir until the sweetener fully dissolves, about 2 minutes. 
  3. Slowly pour the hot syrup into the bloomed gelatin while mixing on low speed (stand mixer or hand mixer).
  4. Once combined, turn to high speed and beat for 8–10 minutes, or until it becomes thick, white, and fluffy (similar to marshmallow fluff).
  5. Add the protein powder and beat on low until just mixed in. 
  6. Pour into a 1 litre glass dish or slice tray. 
  7. Grab the speckled eggs packet, and roll it lightly back and forth with a rolling pin to crumble the eggs. 
  8. Open the packet, and sprinkle the smashed eggs over the top of the marshmallow while it's still warm. 
  9. Pop in the fridge, and wait 1-2 hours to set - enjoy!
