Easter Marshmallow Slice with Speckled Eggs (Only 76 cals & 6.7g protein per slice!)

Ingredients (makes 8 squares):
- 2 scoops (30g) Clean Nutrition Whey Protein powder (Vanilla 🍦)
- 1/2 cup cold water
- 3 Tbs Gelatine
- 1/2 cup Nothing Naughty Keto Sweetener (or any sugar free granulated sweetener!)
- 1/2 cup hot water
- 80g speckled mini easter eggs
- Optional: Drizzle with Nothing Naughty Keto Chocolate Mix ganache made with unsweetened almond milk!

Instructions:
- Measure cold water into a medium sized bowl (at least 1.5 litres), and sprinkle gelatine over the top. Let it sit for 5–10 minutes to bloom.
- Heat the hot water and keto sweetener on the stove until simmering lightly. Stir until the sweetener fully dissolves, about 2 minutes.
- Slowly pour the hot syrup into the bloomed gelatin while mixing on low speed (stand mixer or hand mixer).
- Once combined, turn to high speed and beat for 8–10 minutes, or until it becomes thick, white, and fluffy (similar to marshmallow fluff).
- Add the protein powder and beat on low until just mixed in.
- Pour into a 1 litre glass dish or slice tray.
- Grab the speckled eggs packet, and roll it lightly back and forth with a rolling pin to crumble the eggs.
- Open the packet, and sprinkle the smashed eggs over the top of the marshmallow while it's still warm.
- Pop in the fridge, and wait 1-2 hours to set - enjoy!
